Howdy friends, cowgirls, cowboys, cancer survivors, fellow foodies and vegans,

Welcome to Cowgirls & Collard Greens!

It’s hard to believe that a month has gone by since the launch of this here website.  I wanted to take a moment to thank you all for your tremendous support. Thanks to you, within a day of launching the site some incredibly unexpected and amazing things happened! Not only was the feedback, about the website, wonderfully positive (it even caught the attention of a book publisher in New York!), but it looks like I’ll now be speaking at two upcoming events, AND working with a well-known vegan company. All amazing and wonderful things! Thank you, thank you all so much!!

Speaking of thanks, I’d like to give a big cowgirl shout out to all of the kind human beings who have helped me launch my website, get up and running on social media sites to get Cowgirls & Collard Greens up and off the ground. In particular, my personal get-my-sh*t-done guru, Kristin Lajuenesse (psst…yes her name sounds familiar because she’s the creative genius behind the vegan travel blog, Will Travel for Vegan Food) deserves not only buckets of flowers, vegan chocolates and a raise, but great praise as well. If it were not for her I would simply not be writing this blog right now. If you’re interested in launching your own business or becoming an entrepreneur and need help getting started, check out Kristin’s site. More gratitude abounds for this lovely woman, fellow horse lover and vegan than I am capable of expressing here. Thank you lady K! There were countless others, too many to mention here, who have been a part of the launch and to all of you I tip my hat. For more information about who helped launch this website (web designer, graphic designer, photographer, etc.) feel free to visit the “Resources” page.

As I mentioned, it’s been a really busy month. A few weeks ago Sierra Nevada Memorial Hospital Foundation (my local hospital, where a few years ago, I had most all of my oncology-related treatments) contacted me to be part of their Grateful Patient Program. It was a shock to learn that I had been nominated to be their official spokesperson for their upcoming Paint the Town Pink event this fall. It’s going to be a great joy to share my cancer journey with others, especially the part about how I believe a vegan diet is essential to one’s well-being (it most certainly aided during my allopathic treatments– because well, this cowgirl never got sick!).

Vegan related events seem to be showing up everywhere in my world and this month was no different. Have you ever noticed that sometimes, just putting yourself out there, results in crazy attraction and amazing things? The power of positivity never ceases to amaze me! I attended my very first pop-up food event in San Francisco (thanks to Hella Vegan Eats), enjoyed outdoor rooftop views of the Bay Area at Karine Brighten‘s Ladies Summer Garden Party, fed the pigs at Animal Places‘ 24th birthday celebration, not to mention, I had my first meet-up with fellow blogger Jacqueline Boone of 6 Months to Live (I was a little star struck I must admit) over brunch in San Francisco. All in all, it’s been a bit of a whirlwind month, but a good whirlwind at that!

Because July has been filled with such abundance and busyness, I haven’t quite given my blog the attention that it deserves. My goal is to blog about once a week and as time progresses, I hope to write even more. You can expect future blog posts about the usual suspect topics– all things vegan, horses, health, and living a life filled with fun! In the meantime, please feel free to spread the love by sharing my webpage (or blog) with others and feel free to ask me questions as well. I’d love for Cowgirls & Collard Greens to be a resource for many things – recipes, cancer support, vegans, wellness and more!

Don’t forget to stay saddled up; there are more blogs on the horizon. In the meantime, we can stay in touch a number of ways: Facebook, Twitter, Instagram or Pinterest. The next featured blog post will be a review of the Vegan Cuts monthly subscription Snack Box. I’m super excited to share it with you all!

Yeehaw, Kayle xo
