It’s a perfect time to think about soup now that the seasons and are changing from warm to cool. Today I am sharing a plant based recipe for Vegan African Soup that’s both hardy and delicious. It’s not a spicy soup as the title may suggest, but rather a filling meal that adults and children both enjoy. Plus, it’s easy to make!
Vegan African Peanut Soup with Garlic Whole Grain Crostini Recipe
Ingredients:
-3 Tbsp olive oil– for soup and crostini
-2 medium yams coarsely chopped (makes about 4 cups)
-Organic carrots (about 2 cups, peeled & coarsely chopped)
-Truffle-infused oil ( I used Napa Valley brand from Grocery Outlet) — for crostini
-Organic Peanut Butter (I used creamy Maranatha brand, from Grocery Outlet)
-1 can of tomatoes (28 ounces)
-1 can coconut milk (13.5 ounces)
-1 carton of veggie stock (32 ounces)
-Bunch of cilantro (for garnish)
-Bunch green onions (for garnish)
-Loaf of Dave’s Killer organic whole wheat bread (I used the 21 Whole Grains & Seeds variety from Grocery Outlet)– for crostini
-Package of small peanuts (I used 5 ounces of Premium Orchard brand from Grocery Outlet)
-1 bulb of garlic (I used Christopher Ranch 3 pack brand from Grocery Outlet)

Soup Instructions (makes 8 servings) :
In large pot on medium heat, warm olive oil on stove
Add in 2 medium onions (makes about 2 cups, coarsely chopped)
Let oil & onion sauté for 5 minutes on medium heat, stirring occasionally
Add in carrots & yams, sauté for another 5 minutes, stirring occasionally
Add a half tsp salt & dash of pepper
Add the 28-oz can of tomatoes
Add 1/4 cup coconut milk
Add 2 cups vegetable broth
Stir and bring to a boil then turn heat to low, cover & let simmer for 40 minutes (if water content gets too low add a 1/2 cup water)
On low heat, add 4 Tbsp peanut butter & stir
Use handheld blender (or transfer soup to an upright blender, but be careful – it’s hot) & blend to desired smoothness
Add additional salt & pepper to taste
Top with garnishes and serve with slices of crostini
Enjoy!
Garnish: prepare by dicing cilantro leaves, green onions. Crush peanuts by using the flat of a chef’s knife.
Crostini directions:
-Slice bread into quarters (shaped like triangles).
-Toast under broiler (in oven or toaster oven), watching carefully until golden brown (approximately three minutes)
-Remove from broiler & set aside.
-Peel one clove of fresh garlic, keeping clove intact.
-Rub clove lightly onto each slice of toasted side of bread
-Drizzle Truffle-infused oil or use kitchen brush.
-Serve on the side with soup
This soup recipe is not spicy (kids as well as adults will enjoy). Yams & peanut butter make this a hearty protein-packed meal– perfect for the cooler months like autumn and winter.

I already have quite a fond relationship with grocery outlet, because it supports my addiction which is always creating exciting healthy and vegan meals. I blow all my money on food because it’s my passion and I’ll always choose quality organic foods over what’s cheap. I shop in the organic aisle of grocery outlet often because of their constantly changing variety and it’s exciting to find new things! I’ve never shopped at Grocery Outlet before, I just moved and saw one for the first time a few weeks ago. I didn’t go in since I didn’t think it would be vegan friendly, but I was clearly wrong! If I won, I’d probably buy the things I like to splurge on like gardein products, nut butters, Amy’s frozen meals and cereal. Those are my weaknesses and they always hurt the budget to buy them.

I’ve been to Grocery Ourlet before and love their awesome deals! So glad they carry a lot of vegan goods. I love grocery outlet. On my last visit, I found frozen falafel packs and spinach nugget packs for 50¢. It was amazing. With this gift certificate, my family could eat for a month.
