Today I welcome guest Lindsay Ray of Arohanui Vegan Love to the blog. While Lindsay and I have never met, I have been following her on social media for about a year. Even though I don’t have children of my own, I have been completely drawn to her hands on and natural approach to raising her two young vegan children. Her (primarily raw) recipes are always vibrant and healthful and her kiddos seem to love (and eat) everything she creates. It’s an honor to have Lindsay here sharing one of her recipes. Raw Vegan Caesar Salad RecipeIf you think I have always eaten healthy and lived on salads, think again! Surprisingly salads have always been a food that I was never really interested in. Sauces and dressings were not a part of my food pyramid. Everything was always plain. Ask me today if I like salads, and you will most likely find me with a big salad bowl in hand full of all the colours.

Although salads seem so simple and too healthy for people to be interested in, salads are an incredible way to pack in all the nutrients and feel like you are eating fresh food straight out of the garden. Avocado and salsa are my go to dressings, but there are so many possibilities to create delicious and vibrant salads just by exploring a variety of dressings and fresh greens and veggies. I want to show you that eating raw vegan does not mean boring or too complicated with dehydrators and rare ingredients.

Raw Vegan Caesar Salad RecipeThis Caesar style salad would have been the last salad I would have ever thought to enjoy so I have chosen to share it with you all to show you how our palettes change over time. I never liked olives, and I never ate caesar salads growing up. I am almost 100% positive I never tried a caesar salad even though I remember my sister and family members loving them. There were a lot of foods that I did not eat as a child. Fast forward to now, and my food choices are colorful and fresh! Over the past year, I have really taken an interest in caesar salads due to Peace Pies restaurant. I love their caesar salad wrap and highly recommend to anyone visiting San Diego. It isn’t often you find an amazing raw vegan restaurant full of incredible food and good vibes.

Raw Vegan Caesar Salad RecipeSo here it is! One version of my caesar style salad that I hope you will enjoy. Open your mind and body to earth’s abundance and the beautiful nutrition that will nourish your mind and soul.

Organic Raw Vegan Caesar Salad

Raw ~ Vegan ~ Gluten Free ~ Soy Free ~ Oil Free ~ Organic ~ Non-GMO

Ingredients for the ‘Caesar’ dressing:

1/4 c cashews, soaked & rinsed
1 clove garlic
1 celery stalk, chopped
1 tsp Coconut Aminos
2 Tsp freshly squeezed lemon juice
2 Tsp Dulse Flakes
2 Tsp Nutritional Yeast
1/4 c pure water
Himalayan Salt & Pepper to taste

Ingredients for the salad:

1 head of Romaine lettuce, chopped
2 Lacinato Kale Leaves, de-stemmed & cut in ribbons
1 large Curly Kale Leaf, de-stemmed & roughly chopped
1 c Red Cabbage, chopped
Fresh organic kalamata olives, pitted & sliced to garnish
Raw Macadamia nuts to garnish

Instructions:

For the ‘Caesar’ dressing, place all of the dressing ingredients in a blender until smooth.
For the salad, chop the romaine lettuce and red cabbage. De-stem the kale by grabbing the stalk with one hand and pulling the kale up with your fingers along the stem. Easy peasy! Stack and roll the lacinato kale, then slice thinly to create ribbons. Roughly chop the curly kale. Add all greens and cabbage to a bowl, toss with dressing, and top with macadamia nuts & fresh olives. This salad is creamy & packed with nutrition. Enjoy, & remember to eat nourishing organic foods from the Earth that help you thrive!

*Dulse is an excellent source of Iodine and Vitamin B6. It also provides your body with both iron and potassium.
