Today I welcome Kylie Bennet of the Fellowship of the Vegetable as a guest blogger. I have been following Kylie’s blog and social media sites for over a year and absolutely love her work (she makes some great videos!). Even though Kylie and I live practically in opposite areas of California, I have had the opportunity to have some in-person hang time with her during a couple of my visits to Southern California. I don’t think she has any idea how much I adore her. She’s incredibly beautiful, real, and not to mention, fun! It goes without saying that we both share our love of vegan food which is what’s on the plate today. Get your holiday hat on because you’re in for a real treat with the recipe Kylie is sharing. Nothing says the holidays to me like the smell of apples and cinnamon wafting through the air. I’m not going to lie to you, my baking adventures most often end in disaster. I figure it must have something to do with the science of baking that just doesn’t work with my brain (I always hated science in school), but sometimes…sometimes…I pull off a winner. I’m happy to report that this is one of those times (most likely due to the fact that the dough in this recipe was purchased and not made from scratch)! I know my limitations people! Anyway, moving on…

This super easy apple ginger turnover comes together quick and is full of flavor. You can throw these babies together in about 30 minutes (start to finish) leaving you a ton of time to pour yourself a glass of wine, kick your feet up and relax a little. After all, you just made an awesome dessert and you deserve it! I find wine is a good reward for many things in life.

The sweetness of the apples compliment the spiciness of the fresh ginger perfectly. If you want to keep these a little more traditional, or you’re just not a fan of ginger, you can certainly leave it out. But who doesn’t love ginger??!! I mean, not only is it tasty but it has a ton of healing benefits as well, so you might as well just leave it in.

You can dress your turnovers up by sprinkling them with a cinnamon & sugar mixture, drizzling warm chocolate sauce over the top or if you’re lucky enough to get your hands on the new So Delicious Cocowhip Whipped Topping, drop a dollop of that on and your dessert just got a little bit fancier.

Fellowship of the Vegetable Apple Turnover 1

THE RECIPE:

1 Pkg of 8 Crescent Rolls
1 TBSP Vegan Butter
1 1/2 C Peeled & Diced Apples
1 TBSP Brown Sugar
1/2 TSP Cinnamon
1/2 TBSP Fresh Ginger – Grated

1. Preheat oven according to Crescent Roll packaging. Lightly spray a cookie sheet with coconut oil or another non-stick spray.

2. Melt butter in a sauce pan over medium heat and add apples, brown sugar and cinnamon. Cook until apples are soft, approximately 10 minutes, stirring frequently.

3. Stir in ginger and cook for another minute or two.

4. Spoon about a TBSP of apple mixture into the middle of flattened crescent roll then fold the dough over and press the edges together to seal. Repeat until you have 8 turnovers.

5. Bake for 10-12 minutes or until the dough is golden brown around the edges.
