I had no idea what Brian Patton, The Sexy Vegan, had in store when I asked him to be a guest on my blog this week. What I did know is that he’d have something sexy and delicious prepared for my readers and I guarantee you, he is completely on point! However, I am a little embarrassed to admit that he’s sharing a recipe for collard greens. Why? Well, mostly because when searching through my website, Brian discovered that I didn’t have a recipe of my own…a little strange since I could quite possibly be considered the queen of all things collard and green! No worries though. The problem has been fixed (thanks Mr. Patton, I now have a collard greens recipe that I am certain all will enjoy)!
In case you didn’t know already, Brian is a vegan, chef, dad, two-time cookbook author, radio show host (check out his podcast, Sexy Vegan Radidio of which I have had the pleasure of being a guest) and probably one of the most hilarious people I have ever met. And did I mention he’s sexy too? A native of the great state of Pennsylvania, Brian resides with his wife and vegan toddler in Los Angeles, California where he spends his time blogging, radio-ing and mixin’ up some sexy dishes in his kitchen.

I used to despise collared greens. My first cooking job was at a cafe that also did catering. The chef’s catering specialty was soul food. And when I would go out on jobs to help serve the food, the clients (many of whom had southern roots) would say that her collared greens were the best they’d ever had. I would taste them from time to time, and be repulsed. The funky aroma and sogginess, was not appealing to me in the least. I figured if I don’t like “the best” then these are just something that I’m never going to like. I’m not sure where or when it all changed, I suppose my palate matured, and now I can eat piles and piles of steaming hot greens, generously doused in hot sauce, of course. I may not have what it takes to be a cowgirl, but I can cook the hell out of some collard greens.
Sexy’s Steamin’ Pile o’ Greens Recipe
Makes 8 to 10 side servings.
Ingredients:
- 1 large bunch of collard greens, leaves removed from stems, and roughly chopped
- 1 bunch of green kale (or you could just use more collard greens, but I like the mix), leaves removed from stems, and roughly chopped
- 1 large yellow onion sliced
- 6 cloves garlic sliced
- 1 1/2 tablespoons light oil (canola, vegetable, etc.)
- 1 cup water or vegetable stock
- 4 slices, veggie bacon of choice, crisped in a pan and finely chopped (optional)
- 2 tablespoons apple cider vinegar (or sub in 1 TB of brine from hot cherry peppers for a little kick)
- salt and pepper to taste
Directions:
In a large pot, or wide pan with a lid, heat the oil to medium. Add the onions and garlic. Cook 5 to 6 minutes, until the onion starts to become tender, and the edges of the garlic start to brown.
Add the greens and a healthy pinch of salt. Cook 3 to 4 minutes until the greens begin to wilt.
Add vinegar (or vinegar/brine combo), cook for 30 seconds, then add water or broth. Cover and simmer on low for 30 to 40 minutes.
Season with salt and pepper to taste, and toss with the optional bacon, or use the bacon as a garnish on top of the greens when serving family style. Serve with Louisiana Hot Sauce.
