A couple months ago I received the EAT CLEAN LIVE WELL cookbook by Terry Walters. As someone who frequently reviews plant based cookbooks this one caught my attention. Why? Because first of all, it’s beautiful. It’s thick. And, it’s packed with fresh, organic, clean, whole food recipes. The photographs are gorgeous. I even love the feel of the paper pages. And, I really appreciate Terry’s farmer’s market and locally grown approach as well. Thoughtfully put together, Terry shares recipes based on seasons which I personally think is brilliant. If you ask me, we should eat more based on what’s growing near where we live and which current season we are in.
With the help from my foodie loving photographer, I decided to create one recipe from the book to share with all of you. And with Valentine’s Day this week combined with my love for (healthy) sweets, I thought the Nutty Granola (page 17 in the book) would be a perfect match. Plus, it just might be the perfect breakfast to serve up to your loved one this coming Saturday morning with a few splashes of your favorite nut milk. Go ahead, enjoy dessert for breakfast especially on a day that’s all about love.
Nutty Granola
Ingredients
4 cups rolled oats
1½ cups unsweetened coconut flakes
1 cup sliced almonds
1 cup chopped walnuts
1 cup pecans
1 cup sunflower seeds
1 tablespoon ground cinnamon
1/8 teaspoon ground cloves
½ cup melted virgin coconut oil
½ cup maple syrup
1 teaspoon almond extract
Directions
Preheat oven to 250°F.
In large bowl, mix together all dry ingredients.
In separate bowl, whisk together oil, syrup and almond extract. Pour wet mixture over dry and stir to evenly coat. Transfer mixture to a 9 x 12-inch glass casserole dish and bake 2 hours (until golden and dry). Turn off heat but leave granola in oven to cool and set completely before using a spatula to release granola and break into chunks. Store in airtight container. Makes 9½ cups.
